Harbour Lane Coffee opened on Lane G because BGC needed a coffee bar that treated the cup as a craft object, not a commodity. Every bean on the menu is sourced directly from a single farm or cooperative: Ethiopia Yirgacheffe from the Kochere washing station at 1,900 metres above sea level, Colombia Huila from a family plot in the Andes, and Benguet from the mountain provinces two hours north of Manila. The roast profile for each is dialled to a different target: the Ethiopian is pulled light to preserve its jasmine and bergamot notes, the Colombian is taken to a medium that opens up its brown-sugar sweetness, and the Benguet is roasted to a full city that brings out the cacao and dried-fruit character that makes local beans worth celebrating. The bar is open from 7 AM on weekdays, with the pour-over bar running until close.
